A Story....As told to me by my friend Mike.

"How my day started -
Standing in front of my locker with a towel wrapped around my waist I am talking with a friend of mine. My bag is open so I mange the task of slipping on my boxer trunks when a man steps up. Since he was evidently using the locker right next to mine I slide my bag over on the bench making room for him to move in. The stranger caught my attention with a polite “excuse me” and proceeded to explain that he thought I had the wrong bag. I turned around and sure enough my bag was sitting inside the open locker. As I apologetically pushed the bag over to him I realized I was wearing his underwear! The act of trying to maintain some level of dignity while standing next to a man whose underwear you are wearing requires extreme focus. I stepped out of his boxers and carefully placed them on top of his bag."

An Apology

Over there on the right side of my blog you will see my blogroll, which is a list of blogs I read on a regular basis. And by that I mean hourly. Just kidding.

Imagine my horror when tonight I see a blog post over there--------------->>
containing some not-so-family-friendly material. I have removed that blog from my blogroll (dont let me catch you over there looking for it). And my sincere apologies if anyone unknowingly went there.

Sincerely yours,

A very embarassed redfaced redhead

Still alive....and a restaurant review

Yes I am still alive. I just havent had anything funny happen or anything to write about. Its pretty much been work eat sleep lather rinse repeat.

I do want this blog just to be about every day things. Not necessarily a "mommyblog" although I will write about my kids and the funny things they do and say. Not necessarily a "foodblog" but hey, I wrote about the cake.

Today I had the opportunity to have lunch with my husband at someplace I'd never been. So today, youre getting a restaurant review. Its not newspaper worthy I'm sure, but most everyone eats out at some time or another, so here we go:

Deli Mexicana
1215 S Germantown Parkway, Germantown Tn
They have a website, click it! http://delimexicana.com/

We eat out mexican alot, primarily because its something everyone in my house will eat. The picky one, DQ, is all about some white cheese dip. Sometimes when we eat mexican its all she will get. This is not your normal mexican restaurant which lately seem to be cropping up on every corner (and is in reality "Tex-mex" if you want to get technical). We met the son of the owner who gave us the story on the place. It is owned by his dad who is from Mexico City. He opened it as a hobby and also because there just isnt any place else around like it. They dont buy any food from distributors (ie Sysco) and there is no sour cream, no cheese dip, no ground beef. Everything is market to table or farm to table. Im not the most adventuresome when it comes to ordering and he was eager to help us order from the menu. Its deli-style, so think Brooklyn-deli-meets authentic-mexican.

For a starter we had the obvious which is chips and salsa. The salsa was delightfully fresh with tomatoes and cilantro and a hint of lime. It reminded me a lot of my own salsa I make when the Ripley tomatoes are in season. I wasnt a big fan of the chips, they were a little thick but that's just my preference. Next we tried the steamed corn that was covered with cojita cheese (similar to parmesan) and red pepper. It was served on the cob with a skewer like you get from the fair. YUM YUM YUM! Very light and refreshing.

The entree section of their menu can be served either Tortuga (sandwich) or Taco style. Big Daddy ordered De Huevo con Chorizo (egg and sausage) taco style. It was plentiful with slices of avocado on top. He will have to chime in on the comments to tell what it tasted like. Haha. I ordered the De Pollo Gianajuato (roasted chicken) tortuga. It was pieces of roasted chicken served on a crusty bun type bread cut diagonally. It also had a huge slice of white cheese which was good and didnt overpower the chicken. You also got some chips, a little salsa, and a green Salsa de Aquacate Tayde which is an avocado based spicy green sauce for dipping.

It was a refreshing change from the normal mexican fare we usually have. The line to order was out the door the whole time we were there, it seems to be a really busy place for worker people having lunch. We will most definitely go back there, maybe for dinner time.

Part 2 of Stupid People Who Make Wedding Cake

Lets just say that having a 16" cake was a little ambitious for this fondant virgin. Because not only do you have to roll out the fondant into a sheet the size of Texas, but you have to pick it up and get it ON the cake. Easier said than done. Got it on there, but not without holes you could drive a car through. I did my best to patch the holes and threw in the towel and hit the hay. About 1130pm

At 430am:
WWWWOOOOOOOOOOOOAAAAAAAAAHHHHHHHHHHhhhhhhh! Tornado sirens. Great. Ive spent a week making cake and its going to be eaten by the munchkins in Oz cause thats where we are going to end up. LOL Turned out the storm was not near us so we went back to sleep.

Had another nightmare about cake. This time I was IN the wedding AND making the cake. AND I was running late. The only thing missing was showing up and realizing I didnt have on any clothes. But wait, thats a dream for another KIND of blog! Big Daddy woke me up and said "WHAT are you dreaming about?" I said "WHAT DO YOU THINK IM DREAMING ABOUT???"

Got up and commenced making yellow circles. I discovered that polka dots cover a multitude of sins. I took every shred of leftover fondant and colored it yellow. We made circles and covered most of the places that I had to patch up. Then guess what, more tornado sirens. I said "should we take cover?" Big Daddy said "just keep working." OH great. I can read the headlines now..."Woman covered in cake discovered under tornado stricken house." The sirens they blew and didnt stop. For a couple hours. Then. The rain. I have never seen anything like the rain. It was more than pouring, it was more than buckets, it was more than cats and dogs.

Thankfully it stopped raining in time for us to leave for the wedding. We assembled the cake on site. Very. Carefully. If you have ever watched a cake challenge on Food Network where they have to move the cake from the kitchen to the table, you will understand. I was sweating down in the valley. Another good thing was that it was dimly lit where the cake was at the reception so the patch jobs didnt really show. Amber, the bride's aunt tried to bring some light over towards it. I said "oh no, dont do that!" LOL

The cake looked great and tasted delicious despite my best efforts.

My wedding cake debut...and finale....all in one!

Also titled "When clueless people make wedding cake"

24 FUNFETTI cake mixes
96 eggs, separated
12 cups of oil
36 cups of water*
28 lbs of white buttercream icing
10 lbs of white fondant
3 spools of yellow ribbon
10 dowel rods
1 Ark made of gopher wood
1 Rain plan

*doesnt include water that falls from the sky

Started by making practice cake last sunday night. A 6" round cake with white fondant and yellow polka dots. I was really afraid of the fondant since I'd never used it before, but read lots and asked lots of q's at the cake decorating store. Things went well so I started baking. A total of 10 cakes (6 for the main cake and 4 for the extra cakes). I was off on Tues and Wed so I figured if I got all my baking done by Wed I could decorate on Fri nite and Sat morning.

The wedding was supposed to be outside. As Saturday got closer and closer of course they talked more and more about it on tv that it would be bad weather on the weekend. Sometimes they talk about it so much on tv that you just tune it out. Finally Friday I found out there WAS a plan B. The wedding had been moved inside. Whew.

I got a surprise snow day (and by that I mean "hey we arent busy on Thursday so can I pleasepleasepleaseplease be off?")on Thursday so I had an extra day to get the baking done. GB had a band concert that night so I knew I wouldnt be able to decorate till Friday night. I'd dreamed (read: had nightmares) about cake by this point, and caused others to dream about it, too. I got off work an hour early on Friday and came straight home and started on it. Immediately I realized I had made a few mistakes, and I'll chalk them up to inexperience.

Firstly when I do a cake I usually bake it a few days ahead and freeze it. Then I decorate it still frozen (notice I say "it" because usually there is just ONE, not TEN!). This locks in all the moisture and it doesnt dry out. Well I didnt have anywhere to put 10 cakes, 6 of which were the size of Tennessee. So I just wrapped them in plastic and set them on the dining room table. They did stay moist. So much so that when I went to assemble the cakes they broke. Because #1 they werent frozen and #2 they were HUGE.

Secondly I think I got a little over confident about the fondant. Rolling it out like play-dough is not that hard when you are covering a 6" cake. But rolling out a sheet the size of Texas to cover a 16" cake, and then getting it ON the cake is a whole other chinese fire drill. I planned a big cake because I was told 300 people.

I iced the 2 extra cakes (after I got them assembled) pretty easily. One had a huge crack in the top, but I wasnt sweating it because the extra cakes were for cutting and not for viewing by the general public. Then we went to eat mexican food. I was doing absolutely everything I could do to avoid that fondant. This includes eating cheese dip, entertaining 2 11yearold girls, and sweating large torpedo size bullets!

Thats a picture of my practice cake. Isn't it cute?

Stay tuned for part 2
